As a child of a Sephardic mother, one of my fondest Passover memories was eating delicious Meat and Spinach Mina. Yum!  My mother’s family originates from the former Yugoslavia. She was born in Sarajevo and her family escaped during WWII. My mom’s own special recipe follows.  I hope you enjoy it.

Mina Meat Pie Recipe


3 Tbl of vegetable oil or olive oil

5 onions chopped

1/2 tsp salt

1/4 tsp pepper

2 lb of ground beef  or turkey (Optional – substitute 2 lbs of ground white meat turkey for a lower fat and calorie version)

3 eggs beaten

6 sheets of matza

1 egg beaten for glaze

1. Heat oil in a large skillet over medium heat. Add onions and cook until transluscent.  Add salt, pepper and meat.  Cook and break up meat until lightly browned.  Stir in 1/2 cup of water.   Remove from heat. Cool uncovered in refrigerator for 1/2 hour.

2.  Add eggs to the meat mixture and mix well. Set aside.

3.  Pre-heat oven to 350 degrees.

4.  Fill a large wide bowl with cool water and add matzohs.  Soak until wet through but not falling apart.  Remove and lay on several layers of paper towels.  Place another several paper towels on top to soak up the extra water.  Line bottom and sides of 13 x 9 greased baking pan with some of the matzoh.  Cover with the meat mixture.  Top with remaining matzoh.  Brush with beaten egg.  Bake until golden brown – about 45 minutes.

Optional – Egg Whites can be substituted for the eggs, whole wheat matzoh and ground turkey white meat can be used  to lower calories and fat.

Mina Spinach Pie Filling


To make the Mina as a Spinach Pie, follow the directions above for preparing the Matzohs, and use this filling:

Spinach Filling Ingredients

2 Tbl Butter

1 Medium Onion, finely diced

1 10 oz pkg of frozen chopped spinach, defrosted

1/2 lb Feta Cheese, crumbled

7  1/2 oz Friendship farmer cheese

2 eggs lightly beaten

Salt and freshly ground pepper to taste

Spinach Filling Directions

1.  Melt 2 Tbl butter in a 2-quart pan.  Saute the onion until golden.

2.  Squeeze out all excess moisture from the spinach with your hands and add to the onions.  Cook over low heat, stirring occasionally, until most of the moisture has evaporated.  Mix in feta, farmer cheese, eggs seasoning and then set aside.

National Zoo State Farm Day – 4/5/14

Tomorrow is State Farm Day at the National Zoo from 11 AM – 2 PM.  State Farm® will present a variety of activities with arts and crafts throughout the day and giveaways for visitors to the Kids’ Farm exhibit. A special “Tend your Garden” program will feature ways to recycle used shipping pallets to easily create beautiful urban gardens. Meet members of the Zoo’s horticulture team and help us to “plant” seedlings in the pallets!

Ledo Pizza® will be also be onsite at the Pizza Playground with free pizza samples, while supplies last.

Free Trees through Pepco

For the 4th year, Pepco is partnering with the Arbor Day Foundation to provide 2000 free trees to customers in Maryland and D.C.  This program is designed to help customers save on their energy bills through strategic tree planting. To reserve you free tree go to or call 1-855-670-2771.

The Arbor Day Foundation calculates that the 2,000 trees are estimated to produce more than $380,000 in energy savings  within 20 years. Customers can reserve up two trees per household, and the program will continue until all 2,000 trees are reserved. In exchange for the free trees, customers are expected to care for the trees and plant them based on the location provided by the online tool on the web site. The 2- to 4-foot trees will be delivered directly to the customer at an ideal time for planting. The types of trees offered include Eastern Redbud, Crape Myrtle, Northern Red Oak, Red Maple, River Birch and Thornless Honeylocust.

Sadly, my Mom lost the diamond from her engagement/wedding ring this year. She looked at her hand one day and it was GONE! It’s insured, but the actual diamond my father gave to her when they got engaged was never found.

This teaches us all a lesson about checking our ring prongs.  After Mom’s loss, I checked mine at the jewelers and found that my ring prongs were  wearing down after almost 25 years.

Here are a few rules of thumb regarding your ring prongs:

1. If you’re checking your ring prongs at home use a loupe or magnifying glass. Look at each prong from different angles. Make sure they’re completely in contact with the gem. You shouldn’t be able to see any space between your gem and the prong.

2. If your prongs are bent, which sometimes may happen from bumping into  or catching on something, repair it immediately. A bent prong is a danger to your diamond!

3.  If you have a broken off prong, repair it immediately…do not wear your ring until it’s repaired!

4.  If you have worn out prongs you can either re-tip each prong or replace the head.

5.  Many jewelers offer free ring cleaning.  They will also check your prongs. Do this every 6 months to be sure!
