1-1/2 lbs chicken breasts, cubed, Buy Giant Boneless Chicken Breast for $1.99/lb. Recipe uses: $2.99
1 tsp poultry seasoning, McCormick Grill Mates Seasoning Montreal Chicken Low Sodium, 2.87 oz jar, $3.29 (these are awesome!), recipe uses about $.19
2 tbsp extra virgin olive oil (pantry item, but if you need it Giant has it in their brand for $6.99/17 oz., cost for this recipe is $.41 )
2 red bell peppers, sliced, $2
3 hot cherry peppers, chopped, Sun of Italy, 12 oz jar = $2.99, recipe uses (my guess) $.50, note – Giant may have fresh hot cherry peppers and just not have it noted on the web site
1/2 cup dry white wine, this is a pantry item, but if you need it Giant has Holland House for $3.99/16oz, print $.50 off on 1 here, $1
1/2 cup chicken broth, Giant Brand $1/14.5 oz, recipe uses $.30
1/4 cup chopped parsley, $1.29/bunch, recipe uses $.22
2 tbsp juice from hot pepper, from ingredient above
Salt and pepper to taste – Pantry Item.
Heat large skillet over medium high heat.Cut chicken into large chunks and season with salt, pepper, and poultry seasoning. Add 1 tbsp oil to pan and set chicken in to cook. Brown chicken 2-3 minutes on each side then remove to plate. Add bell peppers, hot peppers, and garlic to pan, saute’ 5 minutes tossing frequently. Add wine to pan and reduce 1 min. Scrape up pan drippings. Add chicken broth and bring to a bubble. Put chicken back into pan. Add the parsley and toss. Cook through, about 2 or 3 minutes. Scatter pepper juice over pan. Serve over lemon orzo. Number of Servings: 4 Total Cost is $7.61
