Cajun Recipe – Shrimp and Sausage Etoufee

Here’s a healthy version of Shrimp and Sausage Etoufee compliments of Sparkpeople.  This can be made with either sausage or chicken.

Ingredients

1 can black beans, strained and juice reserved, Harris Teeter Canned Black Beans, listed as $1.15  (They were on an unadvertised sale of $.77 in the store last week – they may still be at that price)

1 can diced tomatoes – Hunt’s Tomatoes Diced Fire Roasted are on sale for $.90, print coupon here for $.40 off on 2, $.50

1 large green pepper, diced, $1.49

1 medium onion, diced, est. $.50

2 tbsp extra virgin olive oil, Filippo Berio is on sale for $6.99/25.5 oz., print $1 off coupon here , recipe will use about $.50
 
1 pkg. low-fat smoked sausage, sliced thin – Hillshire Farm Polska Kielbasa Light is on sale for $3.50/package
2 cups shrimp, thawed, uncooked – HT Trader’s Shrimp is on sale with the VIC card for $9.98/32 oz.  Recipe calls for 1/2 or $4.99

4 cloves of garlic, $.50

cajun seasoning to taste – Cajun’s Choice Seasoning – $1.99 recipe will use about $.50
Total = $13.25 ($14.50 with the brown rice)
Directions

Saute’ onion, garlic, and peppers in olive oil until tender. Add shrimp, sausage, tomatoes (including juice), and black beans (without juice).
Slowly add in cajun seasoning until you get the desired taste.
Simmer for about 20 min on medium heat.
If your sauce isn’t thick enough, you can add in some of the black bean juice to help thicken it.
Serve over brown rice, (Minute Steamers Whole Grain Brown Rice is on sale for $1.25) and enjoy.
Makes 5 servings of 1 cup each.
